I’m Claire, a self taught baker and owner of Apple + Peacock.

I live in the pacific northwest with my husband, my daughter and my very sweet black lab. I grew up in northern California where I have fond memories of baking with my mom and two older sisters. Many afternoons were spent in my parent’s kitchen, sitting together in the warm sun, flipping through food magazines and selecting new recipes to test out.

The base for this cake is near and dear to my heart. It’s a family recipe that came from my Auntie Marcia. I’ve named of some of the cakes as an ode to where my Auntie lives and where I grew up vacationing on the California coast.

My cheesecakes are best described as very light and delicate. Although the original vanilla classic flavor is my favorite, I continue having fun developing new flavors as requested.
